I bought this amazing book in the Muji stores in Hong Kong recently. It covers some 360 activities you can do that are all nature based and categorised into seasons to best do these. One of these included a recipe for beetroot gnocchi which I tried out and was delicious. The gnocchi were made with beetroot and mashed potatoes and flour. Then they were boiled in salted water and flash fried in a hot pan with some butter and pesto for a crispy touch.
